This year I planted two types of beetroots in my garden. I really love beetroots and that’s why this year I sowed 3 rows of them. Next season I will add another two rows of a new variety. The yellow beetroot seems like an exciting one. I’ve never eaten this variety, but it looks very colourful on a plate. This year I grew the red kogelbiet and Chioggia beets.

My favourite is the small young kogelbietje, which tastes sweet and very delicious. The Chioggia beet has a milder taste, so in case you are not the biggest fan of beets, you could try this one. :). This is how do you make beetroot crisps.

This is my way to make beetroot crisps and probably the best one!

So, how do you make beetroot crisps? You can use beets for a lot of different recipes. Pickle them, so you can eat them during the winter as well. You can eat them right after harvesting, by cutting them in very thin slices like a carpaccio.

After harvest, you can also boil them and use them in a salad or a pasta dish. But there is another fun thing you can do with them: make crisps. You might think it’s weird, but you should try it yourself!

This is what you need for 2 portions: Salt and Baking tray with parchment paper

1 – Preheat the oven to 175 degrees Celsius.

2 – Peel the beets and cut them in very thin slices using a peeler or a mandolin.

3 – Distribute the pieces across the baking tray and put some salt on top. The salt will extract most of the moist from the beets.

4 – Let it stand for 15 minutes and afterwards remove the beets from the parchment paper and replace the parchment paper.

5 – Put the beets back on dry parchment paper on the baking tray. Put the baking tray in the oven and wait for about 46-60 minutes. The duration depends on the size of the beets. The smaller the pieces, the quicker they will be crispy.

6 – They are ready to serve once they are curled and crispy.

They are very delicious and there is no need to add a lot of salt, because they already have a salty taste.

Beetroot tip:

After boiling the beets, fill the pan with cold water. Under water, it’s easy to remove the thin peel of the beats with your fingers, without your fingers turning completely red. In case you remove the peel without doing it under water, you might want to wear gloves.

For this you can use very thin kitchen gloves. You can easily rinse and dry them, so that you can reuse them later. If you do not have these gloves, you can also peel them with your bear hands. Afterwards, take half a lemon and rub your hands with it. Rinse your hands with water and repeat this step once again. You will notice that the red staining will quickly disappear. 🙂
